Homemade Freezer Pancakes
These fluffy, old fashioned pancakes save so much time in the mornings! Make a large batch and freeze them to use for breakfasts. Simply warm them up for a couple of minutes on a grill or toaster oven!
- 0.5 Cup Whole Wheat Flour
- 1 Cup All Purpose Flour
- 1.25 Cups Whole Milk
- 1 Egg
- 3.5 Teaspoons Baking Powder
- 1 Teaspoon Salt
- 1 Tablespoon Honey
- Some Butter / Non-Stick Spray (For cooking)
Preheat a large non-stick pan to medium-low heat
Whisk the milk, egg and honey until well combined
Sift in the two flours, baking powder and salt
Mix everything together until well combined
Melt butter on your non-stick pan
Use a small ladle or large spoon to pour the pancake batter on your pan in individual, small, round sizes (you can make them larger if you like)
Let this cook until you see the tops starting to dry up a little.
Flip the pancakes and cook on the other side. Each side should take about 2 minutes.
Continue to cook the pancakes until your batter is finished.
Place the pancakes on a cooling rack and let them cool completely
Freeze the pancakes in a single layer
To avoid sticking, you can flash freeze the pancakes on a baking tray in a single layer. Once they are hard on the outside, you can place them in a ziploc to store in the freezer for up to 3 months.
