Easy Cake Rusk Recipe
Hello cake rusk lovers! I love cake rusks with my coffee and tea but since this quarantine, I have not been able to buy any! So, I finally decided to make my own and I cannot believe I did not try this before. I have been missing out! They are not too sweet but still have that crunchy, delicious taste. The recipe is so simple and it's safe to say, I will making my own cake rusks from now on! Please make these and tag me on Instagram, I love seeing your creations ❤️
- 1/2 Cup Softened Butter
- 3/4 Cup Sugar
- 2 Whole Eggs
- 1 Cup All Purpose Flour
- 1 Teaspoon Baking Powder
- 1 Teaspoon Vanilla Sugar / Extract
- 3 Drops Yellow Food Colour ((optional))
Preheat your oven to 350°F (180°C)
Line an 8×8 inch baking pan with wax paper and grease all sides with a non-stick cooking spray or a tiny bit of oil
Add butter and sugar into your bowl and mix vigorously until it is well combined and becomes pale in colour and fluffy
Add 1 egg and mix again until the everything is incorporated into a smooth, pale coloured paste (add your vanilla extract at this point if you are using it)
Repeat above step with the 2nd egg
Sift together the flour, baking powder and vanilla sugar
Mix only until everything is incorporated into a thick batter
Pour into your prepared pan and bake in your preheated oven for 20-30 minutes (until your toothpick comes out dry)
Remove pan from the oven and allow it to cool for 20 minutes
Preheat your oven to 300°F (150°C)
After cooled, remove the 'cake' onto a cutting board and using a serrated knife, cut ½ inch thick slices/rusks (pictured above). I was able to get 32 slices
Place the cake rusks onto a baking tray and bake for 20 minutes, flipping them halfway
If you find your cake rusks are developing too much colour, cover your baking tray with aluminum foil. This will stop them from darkening further
Enjoy with a steaming cup of coffee or tea!
